
Friday Night Pizza Night

Tonight's pizza turned out pretty good. Here's my go-to dough recipe for Friday night pizza:
- 200 grams AP flour
- 250 grams pizza flour (00)
- 9 grams yeast
- 9 grams salt
- 11 grams sugar
- 250 grams water
- A little too much olive oil
Combine everything in a stand mixer. Watch some basketball while the dough rises for about an hour or so. Stretch it out on a greased pizza pan (I'm not good enough to use a peel) and top it. Cook it in the oven as hot as it can go (550 degrees for me) for about 8 minutes. At this point the crust should be a little bit browned. Slide it off the greased pan and let it cook for about 2 minutes on the pizza stone that has been sitting in the oven. Let it rest for a few minutes before you cut it.
This makes a pretty nice pizza with a crispy bottom crust. It'd be better if you made it ahead of time and let it hang out in the fridge, but I am not thinking that far ahead most days.
